Breakfast
Scrambled Tofu
Ingredients:
500g firm tofu
2 tablespoons soy sauce
¼ teaspoon tumeric
2 teaspoons dried onion
3 tablespoons soy milk
¼ cup fresh parsley, chopped (optional)
Preparation:
Rinse and cube tofu. Mash with the soy sauce, tumeric, dried onion and
soy milk until reasonably fine and crumbly. Mix in the parsley if desired.
Fry in a tablespoon of oil until lightly golden. Delicious on it’s
own, or on toast.
